A New Chapter of Undersea Luxury

In our pursuit of excellence, we have elevated the art of champagne aging beyond the traditional cellar. Beneath the surface, the ocean offers stable temperatures, gentle movement and natural pressure that together create an ideal environment for refinement. Over time, these rare conditions enrich the aroma, texture and character of the champagne, resulting in a taste that is both complex and beautifully rounded.

On June 16, 2025, nine bottles of Dom Pérignon 2012 and 2013 were placed in a custom-crafted underwater cage beside Ithaa’s glass structure. After six months of maturation in this remarkable setting, the bottles will be brought to the surface on December 16, 2025. They will be offered exclusively to guests dining at Ithaa, providing a truly unforgettable opportunity to enjoy Champagne that has been shaped by the sea.
