six months beneath the indian ocean

the art of extended champagne aging

There is a different kind of cellar beneath the Indian Ocean.

At Conrad Maldives Rangali Island, selected bottles of Dom Pérignon leave the familiar surroundings of a wine cellar behind and begin a journey into the waters surrounding Ithaa.

For six months, they remain beneath the surface, immersed in the ever-changing world of the reef. It is a journey measured not only in time, but in place – from the moment each bottle leaves the island to the moment it returns to the table.

THE BEGINNING

Every journey begins with a first step. For these bottles, it begins on Rangali Island.

Selected bottles of Dom Pérignon are carefully prepared for a journey that takes them somewhere few bottles of Champagne have ever been. They leave the familiar surroundings of a cellar and are carried towards the water, where the turquoise horizon gives way to the depths of the Indian Ocean.

Just beyond Ithaa, beneath the surface, another kind of cellar awaits.

The bottles are carefully secured before beginning their descent, marking the beginning of six months at sea.

The destination is beneath the surface. The journey starts here.

THE DESCENT

The waters surrounding Ithaa are familiar to us in one way: as the view beyond the glass, where reef fish pass, rays glide and the currents move gently around the restaurant.

For the bottles, the ocean becomes something entirely different.

Lowered carefully beneath the surface, they descend into the blue and settle into their underwater resting place. Above them, the island continues its rhythm. Below, the reef carries on around them.

Light filters through the water. Currents move gently past. Marine life comes and goes.

And then, for the bottles, there is simply time.

THE WAIT

Six months is a long time to wait for a bottle of Champagne.
But that is precisely the point.

While life continues above the water, the bottles remain beneath it, surrounded by the natural environment of Rangali. Days become weeks, and weeks become months, as the ocean becomes their temporary home.

There is something fitting about allowing time to take its course here.

Rangali has always been a place where the ocean invites us to slow down; to look beneath the surface, to notice what is often missed, and to experience familiar things from an entirely different perspective.

For six months, Dom Pérignon becomes part of that world.
Not rushed. Not hurried. Simply left to its journey.

THE RETURN

Then, after six months beneath the surface, the journey comes full circle.

The bottles are carefully brought back from the depths and returned to the island. What began as an idea has become a story that can finally be brought to the table.

From the shore, to the sea, and back again.

Their destination is Ithaa: the restaurant that has been at the heart of Rangali’s relationship with the ocean since it first opened beneath the surface.

And here, the story changes once more.

The bottles that spent months beneath the Indian Ocean are no longer simply resting beneath it. They are being opened within it.

FROM OCEAN TO TABLE

Five meters beneath the Indian Ocean, Ithaa has always offered a perspective unlike anywhere else.

Now, it becomes the final chapter of the sea-aged Dom Pérignon journey.

The same waters that surrounded the bottles for six months become the setting in which they are finally enjoyed. Above the reef, beneath the curved glass of Ithaa, guests can experience the Champagne in the place that connects every part of its story.

It is a journey that begins on land, continues beneath the sea and returns to the table.

A bottle of Dom Pérignon.

Six months beneath the Indian Ocean.

And an experience that could only happen at Rangali.
